The Perfect Cookie: Oatmeal Chocolate Chip

Everyone needs that go-to comfort food recipe. Maybe it’s mac ‘n cheese for some; it’s sloppy joes for others. But whatever that food is, we can be certain it does at least one thing: It just makes you feel good. These oatmeal chocolate chip cookies do just the trick. They’re chewy, they’re soft, they’re moist, they’re sweet and best of all, there’s chocolate. Believe it or not, I got this recipe from one of those crazy email forwards. I’ve tweaked it a bit for an end result that’s softer and not overbearingly sugary.

Serves: About 2 dozen cookies
Prep time:  About 45 minutes
Cook time: 7 minutes

Ingredients
1 cup unsalted butter
1 cup brown sugar
1 cup sugar
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
2 cups flour
2 eggs
2 teaspoon vanilla
2-1/2 cups blended oatmeal (old-fashioned)
10 oz. chocolate chips (1 bag)

1. Preheat oven to 350 degrees. Cream the butter in your mixer, until softened. Add sugar. Add baking soda, baking powder, salt, flour, eggs and vanilla.

2. Blend the oatmeal or pulse in a food processor until the flakes look like powder. Add to mixture.

3. Add chocolate chips last.

4. Lightly coat a baking sheet with baking/cooking spray. Arrange the cookie dough in 1.5-2″ balls on the sheet and bake until light golden brown, about 7 minutes.

My notes:
Why grind the oatmeal? I’ve often found that oatmeal cookies tend to be too chewy and lacking in any flavor other than oatmeal. Blending or grinding it results in a still-chewy cookie that will have your friends wondering what mystery ingredient you added.

If you end up with more or less cookies: Depending on how large you want the cookies to be, this recipe ends up creating more or less cookies. I like to make slightly large portions, so I end up with 24-30 cookies.

Make an ice cream sandwich! Buy some vanilla bean ice cream from the store and plop a scoop in between two cookies. This sweet treat would definitely put BJ’s Pizookie to shame.

    Amazing recipe and it came out perfect the first time!!! I love oatmeal and chocolate chips, but absolutely hate raisins so it’s rare for me to find the right combination. These cookies come out soooo moist and tasty. Only way to make it better is to eat it with a scoop of vanilla ice cream:)
